Wine pairing is a high art, and some flavor combinations can befuddle even a seasoned home sommelier. Choosing the correct wine can become complicated quickly with the addition of certain ingredients; vegetables in particular. Many wines pair wonderfully with certain proteins, but when paired with vegetables, those same wines virtually lose their balance.
As the Wine Director and Sommelier at the world renowned Manresa Restaurant, Jeff Bareilles has been working with this dilemma for over 6 years. While Chef David Kinch carefully selects the cultivars and flavors that grow year-round in our garden, Jeff is constantly challenged to search for wines that complement these distinct flavors.
This class will highlight six different wines and how they interact with a variety of flavors. Jeff will focus on some unusual pairings, working with both raw and cooked components and the best way to approach them when deciding on a wine. Students will gain knowledge, insight and experience in undertaking the more challenging aspects of pairing wines.
Tuition: $125 (must be 21 to attend) (this intimate, hands-on course will be capped at 16 students - enroll early!)
