Chez Pim's marmalade is something of a cult item among those in the know. Vogue magazine's food writer and renowned gourmand Jeffrey Steingarten calls it "unparalleled." Pim puts her maramalade up for sale once a year and pretty much sells out immediately each time. Lucky for us, Pim has agreed to share her secrets in a class here at the farm.
In this workshop, Pim will teach you the fundamentals of marmalade making and her unique take on it. From start to finish, you'll learn three different styles of marmalade: the classic, bitter, English style made from sour oranges; a sweeter marmalade made from sweet citrus such as Mandarin or Clementine; and a spice-infused marmalade.
This class will be fun and useful for both beginner and experienced marmalade-makers alike! Please bring your own very sharp knife and a small cutting board for hands-on practice during the class.

I took the class today, it was excellent for both beginners and experienced marmalade makers. Pim shared a lot of secrets, in particular special techniques to deal with different types of citrus. We made some delicious marmalade in class and also got to take some home. A++ class, I hope to take another one from Pim soon.

I would love to come to the class, but I currently live in Australia! I'm actually visiting the US from the end of March until the end of April but it looks like I'll be a bit late for it. If there's demand for another class, please let me know. I'll be happy to send preferred dates to be able to learn her techniques and bring them back to Australia!
