Our chocolate candy-making workshops are some of our most popular, and we're changing it up this time. Almost everybody loves to get a gift of homemade candy or be able to whip up a batch of something incredible for family or guests when they're visiting.
Chocolate-based creations can feel daunting to make without an experienced guiding hand to help you. This workshop sees that you go home with those skills.
We start with an introduction to chocolate, including tempering methods. We move on to how to make the perfect ganache filling using exotic herbs, liqueur enhanced truffles, and then tackle some classic nut recipes. Once you learn the basic chocolate techniques to create four distinct recipes, students will then be taught how to expand upon them to make endless variations of dark decadence.

She believes that using food as an art medium is a way we can cultivate creativity. Along with teaching and cooking professionally, Anne has enjoyed a full culinary career as a restaurant critic, wine judge, food judge, and food writer in the Monterey Bay Area. She has owned two bakeries: The Queen of Tarts and Let Them Eat Cake!
She currently teaches professional culinary arts courses at Cabrillo College and in Santa Cruz County.
