Canning can be intimidating, but it really isn't as hard as it looks. From the different jars, array of closure methods, fear of spoilage, and bizarre looking tools, it's easy to get overwhelmed with the idea of canning your summer bounty. We help you break through the confusion, and once you know how to can, it's really quite easy, fun and useful.
Since this is an introductory course, we won't be tackling the intricacies of a pressure cooker. There is plenty of canning to be done with everyday kitchen tools if you know what you're doing. This class is taught by Cynthia Sandberg at Love Apple Farms, located at 2317 Vine Hill Road, Santa Cruz, CA.
This hands-on workshop is limited to six students. Class participants will learn basic water bath canning and will take home several jars of canned goods. If you'd like to advance your skills, consider our Using a Pressure Cooker class.

Looking forward to my first class AND my first season of canning tomatoes! Nothing beats fresh marinara or tomato soup in the winter!

pickling veggies is a fun process and the possibilites are endless. Get a couple of good brine recipes and experiment with veg combo's.
My first pickling was done when I lived on Olive Springs Rd--Brother and I picked 120 # of cukes in W'ville and did many cases. Those were the best garlic dills ever! (tip: put a young grape leaf in the jar bottom to help keep them crisp)Lou Deasy of Capitola was the Pickling King at the time. He took all the blue ribbons at the fair, and better yet, shared his family brine recipes!
