This workshop will teach you the basics about using a pressure cooker. You can preserve low-acid foods such as tomatoes, potatoes, pasta sauces, green beans, even meats using a pressure cooker.
Pressure cookers can also be used to quickly soften cuts of meat that would otherwise take hours to cook (you've seen them used on Iron Chef and Top Chef episodes to do this).
Using a pressure cooker may seem mysterious and scary to some of you, but come to Love Apple Farms to learn how to use one safely and effectively. Class is limited to six students, taught by Cynthia Sandberg, owner of Love Apple Farms in her home kitchen located at 2317 Vine Hill Road, Santa Cruz, CA.
This is a hands-on workshop where we will be pressure cooking tomatoes, another seasonal fruit or veggie, and a tough cut of meat to show you how tender it can be when pressure-cooked. We will dine on the meat and students will take home the pressure-canned goodies. If you'd like to first learn the basics of canning, you'd do well to take our Simple Canning & Preserving Class.
